have one's hands full(手いっぱいだ)
日本語の「手いっぱい」は、何かをするのに精一杯、忙しくて他のことに手が回らない、といった意味です。英語も同じく、have one's hands full で「手いっぱいだ」です。with を付けると、「~で手いっぱいだ」。
この full は形容詞で、have one's hands full は文型としては第5文型(S+V+O+C)です。
- I have my hands full with my three children.
(私は3人の子供のことで手いっぱいだ) - I have my hands full with all these meetings today, so can I call you back tomorrow?
(今日は会議で手一杯だから、明日また電話してもいい?)
full of との違い
上の例文のように、「~で手いっぱい」は have my hands full with です。でも、普通は full の後に of が付いて、full of(~でいっぱいだ)の形になります。have my hands full of ではダメなのでしょうか?
full of は be full of のように、be動詞と一緒に使われることがほとんどですが、たまに他の動詞の時もあります。
- The gallery was full of people.
(ギャラリーは人でいっぱいだった) - The garage has got full of junk again.
(ガレージがまたガラクタでいっぱいになった) - Our new brochure is crammed full of inspirational ideas.
(私たちの新しいパンフレットには、インスピレーションあふれるアイデアが満載です) - There were cardboard boxes stuffed full of clothes.

日本語訳だけ見ると、hands full of でもよさそうな気がしますね。けれどよくよく考えれば、of~ の場合は「~がいっぱい」「~がたくさんある(いる)」です。
仮に、最初に挙げた例文を full of にすると、full of my three children は「3人の子供がたくさん」、full of all these meetings は「これらすべての会議がたくさん」になってしまいます。
「子供」や「会議」がたくさんあるわけではないので、「~で手いっぱい」の場合は with です。
handful of(一握りの)
一方、handful は名詞です。意味は「一握り」「少数」。-ful と付いているのに、ニュアンスは「少量」という不思議な単語です。
a handful of は「一握りの~」。handful の前に large(大きな)、double(両手の)、small(小さな)など、形容詞が付くこともあります。
- Only a handful of people came.
(ほんの一握りの人々だけが来た) - Add a large handful of chopped herbs.
(大きく一掴みした刻んだハーブを加えてください) - She bent and pulled up a double handful of weeds.
(彼女は腰をかがめ、両手で雑草を引き抜いた)
また handfuls of と複数形にすると、一掴みではなく、二掴み、三掴み…のような複数回を示します。
- She grabbed handfuls of the dirty snow.
(彼女は汚れた雪を手でつかんだ) - I use two handfuls of pasta per person.

not more than a handful of(一握りもない)
more than a handful of は、「一握りより多くの」です。以下は The Guardian より引用。
- Some people questioned whether there would ever be more than a handful of these posts.
(このような投稿が一握り以上になることはあるのだろうかと疑問に思う者もいた)
not が付いた not more than は、「~より多くない」なので、not more than a handful of は、「一握りほどもない」という、さらに少ない数量を表します。
- They cannot hope to win more than a handful of seats at the next election.
(次の選挙では、わずかな議席しか獲得できないだろう)
handful(手に負えないもの)
handful は、口語で「制御するのが困難な人(または物事)」の意味もあり、よく「子供」に対して使われます。形容詞っぽく見えても、あくまで名詞です。
- Her children can be a real handful.
(彼女の子供たちは本当に手に負えない) - This project seemed easy at first but it has become a real handful.
(このプロジェクトは最初は簡単そうに思えたが、実際手に負えない)
ひとつめの例文のように、主語が her children と複数でも、a handful と単数形。「手に負えないもの」の意味では、a handful と単数形を使います。
